Thompson, who spent 14 years as chief executive of British National Lottery provider Camelot, will join the group on 1 February, initially as a non-executive director.
Once the AIM-listed firm appoints a new chief executive officer, Thompson will take over as non-executive chairman and Christopher Rogers, currently interim executive chairman, will return to his previous role as non-executive director.
Walker Greenbank said the ongoing search for its new chief executive was "progressing well" and that a further announcement would be made in due course.
Rogers said: "I am delighted to welcome Dame Dianne Thompson to Walker Greenbank's board both as a non-executive director and as chairman designate."
"Dianne is a highly experienced executive and non-executive director and, as chairman, will bring a strong marketing and operational focus to the Board. We look forward to working with her."
As of 1220 GMT, Walker Greenbank shares had dipped 0.53% to 85.54p.
